Information from the Statistics and Census Service (DSEC) indicated that number of operating restaurants, eating & drinking places and cooked-food stalls in municipal markets increased by 44 year-on-year to 2,309 in 2017, including 2,237 restaurants, eating & drinking places and 72 cooked-food stalls. Number of persons engaged totalled 32,749 (+198), and 96.1% of them were employees. Receipts of the industry amounted to MOP 11.22 billion, up by 5.5% year-on-year; expenditure grew by 5.0% to MOP 11.01 billion. Gross Surplus totalled MOP 215 million, up by 23.2%, and Gross Surplus Ratio edged up by 0.3 percentage points to 1.9%. Gross Value Added that measures the sectoral contribution to the economy amounted to MOP 4.06 billion, up by 3.4%, while Gross Fixed Capital Formation decreased by 8.0% to MOP 318 million.
Number of restaurants and eating & drinking places went up by 48 year-on-year, and number of persons engaged increased by 181 to 32,594. Receipts and expenditure of these establishments amounted to MOP 11.17 billion and MOP 10.98 billion, up by 5.5% and 5.0% respectively year-on-year. There were 621 Chinese Restaurants, their receipts grew by 7.4% year-on-year to MOP 4.86 billion, and expenditure rose by 5.8% to MOP 4.74 billion. Local-style Cafes, Congee & Noodle Shops totalled 840; their receipts were similar to those of 2016, at MOP 2.43 billion, whereas expenditure increased by 2.6% to MOP 2.36 billion. Meanwhile, the 208 Western Restaurants recorded MOP 1.29 billion in receipts and MOP 1.31 billion in expenditure, representing growth of 9.8% and 16.7% year-on-year.
Restaurants and eating & drinking places registered increases across all items of expenditure. Purchase of Goods (MOP 4.10 billion), Compensation of Employees (MOP 3.85 billion) and Operating Expenses (MOP 3.04 billion) rose by 7.4%, 2.5% and 5.1% respectively year-on-year. With respect to Operating Expenses, Rent of Establishments went up by 11.1% to MOP 1.35 billion, accounting for 44.4% of the total; Electricity Charges grew by 4.1% to MOP 377 million.
Gross Value Added of restaurants and eating & drinking places increased by 3.3% year-on-year to MOP 4.04 billion in 2017. As the growth in receipts outpaced that in expenditure, Gross Surplus rose by 22.9% year-on-year to MOP 197 million, and Gross Surplus Ratio inched up by 0.3 percentage points to 1.8%. Meanwhile, Gross Fixed Capital Formation dropped by 8.0% year-on-year to MOP 318 million, on account of a decrease in acquisition of fixed assets such as machinery, equipment and shops in 2017.
Number of cooked-food stalls operating in municipal markets decreased by 4 year-on-year to 72 in 2017; number of persons engaged increased by 17 to 155, with employees taking up merely 7.7%. Receipts and expenditure of the stalls totalled MOP 45.66 million and MOP 28.14 million, up by 10.4% and 1.9% respectively year-on-year. Gross Value Added rose by 15.4% year-on-year to MOP 18.92 million. Gross Surplus amounted to MOP 17.51 million, up by 27.6%, and Gross Surplus Ratio grew by 5.2 percentage points to 38.4%.
Coverage of the Restaurants and Similar Establishments Survey comprised licensed restaurants, eating & drinking places, and cooked-food stalls in municipal markets in 2017, excluding restaurants and similar facilities directly operated by hotels and gaming establishments, as well as street hawker stalls.
