Masterclass Series of Culinary Expertise Demonstration Workshop

Macao Government Tourism Office (MGTO) and Wynn Macau jointly organized the Masterclass Series of Culinary Expertise Demonstration Workshop. Acclaimed master of Suzhou cuisine, Hua Yonggen, was invited to be the guest speaker while Head Chef Chen Jianping was invited to conduct culinary demonstration. The Masterclass series aim to inspire local professional chefs towards a deeper understanding of the essence and preparation of cuisines originating from different parts of China, to broaden their horizons and enhance their culinary expertise, as part of the vision to steer Macao’s catering industry towards greater diversification and professionalism, thus creating high-quality travel experience for visitors.

MGTO Deputy Director Cheng Wai Tong, Head of Training and Quality Management Department of MGTO, Doris Leong, Executive Vice President for Food & Beverage of Wynn Macau, Kristoffer Luczak, and Executive Director of Wynn Food and Beverage Academy,David Wong, attended the Masterclass Series of Culinary Expertise Demonstration – Suzhou Cuisine Workshop at Wynn Food and Beverage Academy today (10 June), among other personages.

Deputy Director Cheng Wai Tong highlighted that this year marks the fourth anniversary since Macao gained the designation as a UNESCO Creative City of Gastronomy. Macao continues to leverage gastronomy as an element of cultural exchange to carry on its unique hue of diverse cultural harmony, and dazzle with its glamorous calling card as a UNESCO Creative City of Gastronomy.

Honorary Chairman of Jiangsu Province Cuisine Association and Chairman of Gastronomic Culture Study Association of Suzhou Cuisine Association, culinary master Hua Yonggen, elaborated on the artistry of Suzhou cuisine, while Head Chef of Jiangnan Delicacy, Chen Jianping, demonstrated pertinent culinary skills to local professional chefs at the Workshop through preparation of the dishes namely “garden coin-patterned cube cake” and “pan-fried shrimps with chickpeas”. The chef participants shared culinary ideas with each other and seized the occasion to learn more about the culinary essence of Suzhou cuisine through profound culinary exchange with acclaimed master Hua Yonggen and Head Chef Chen Jianping, to enhance their culinary expertise and carry on China’s gastronomic culture. Participants were also inspired to innovate on local recipes. In addition, the Workshop rigorously followed the pandemic prevention guidelines issued by Health Bureau. Participants were required to wear masks throughout the Workshop, have their temperature checked and present Macao Health Code of the day upon entry.

Boasting nearly 50 years of experience in culinary coaching and management in the catering industry as well as food culture studies in Suzhou, acclaimed master Hua Yonggen is dedicated to preservation and development of Suzhou cuisine. He was awarded “Outstanding Contribution Award for Advancing China’s Catering Industry Development over 40 Years of Reform and Opening up” and “Meritorious Figure for Jiangsu’s Catering Industry at the 70th Anniversary of the Founding of the People’s Republic of China” by China Cuisine Association and Jiangsu Province Cuisine Association respectively.

MGTO will continue to partner with industry operators in organizing different training opportunities for tourism and related industry professionals, to foster the development of the local catering industry and push forward the work of Macao as a UNESCO Creative City of Gastronomy as planned, joining hands with industry partners in developing Macao as a Creative City of Gastronomy, steering Macao’s tourism industry towards diversification and sustainability.
